You can make it as cheesy as you like but I wouldn’t go too far with it. The fresh thyme with the turkey blend very well together and the Feta cheese gives that salty extra kick.

Of course you can try it with ground chicken but I would avoid the breast. The thighs have a bit more fat and are tastier.

Be creative and replace the prosciutto with mortadella, ham or even bacon streaks. I have found that prosciutto di Parma works great, so why replace it? A winning team never changes!

If you have a dinner party, one suggestion: make some space for a wooden plate in the middle of the table and serve the whole loaf in there. Watch the expression on the faces of your guests. Everyone is amazed! I did it and didn’t stop receiving compliments.

Ingredients
  • 750 gr (26 oz) ground turkey thigh.
  • 150 gr (5 oz) prosciutto slices.
  • 1 red bell pepper chopped.
  • 1 green bell pepper chopped.
  • 1 onion chopped.
  • 3-4 garlic cloves chopped.
  • 200 gr (7 oz) Feta cheese in cubes.
  • 150 gr (5 oz) yellow cheese (Cheddar, Manchego, Monterey Jack etc) in cubes.
  • A generous bunch of fresh thyme.
  • 2 tablespoons dried oregano.
  • 1 egg.
  • Salt and ground pepper.
Instructions
  1. Put all the ingredients (except from the prosciutto) in a large bowl and knead well for 3-4 minutes. Cover the bowl with cling film and leave it in the fridge for a couple of hours.
  2. Preheat the oven at 180 Celsius (360 F).
  3. Cut a large piece of aluminium kitchen foil and lay it on the bench. Place a piece of greaseproof paper of the same size on top.
  4. Lay the prosciutto pieces next to each other making sure you don't leave any gaps. The prosciutto surface should be able to cover the whole loaf.
  5. Use the turkey mixture and make a long loaf. Transfer it to the prosciutto base and fold the greaseproof paper, making sure the prosciutto pieces cover the whole roll.
  6. Cover with the kitchen foil and secure the edges. Place the loaf on a tray and add 4-5 cups of hot water. Depending on the tray, it should reach about the middle of the loaf.
  7. Bake for ~ 75 minutes. Check the tray form time to time and add some water if needed.
  8. Serve it hot with some salad or yoghurt.
